EASY COOKING AND TASTY COOKING
LAMB STIR FRY
Ingredients
2 Tablespoons cornstarch
1 Pound lean lamb
3 Green onions
1 Egg white
2 cups vegetable oil
3 Slices ginger roots
1 Small red bell pepper
3 (oz) can sliced bamboo shoots
2 Teaspoons dry sherry
ΒΌ Cucumber
Required sea salt and white pepper to taste
Preparation
# Lean lamb is thinly sliced
# Green onion, finely chopped
# Separate egg white from egg and lightly beaten
# Ginger root, peeled and finely chopped
# Red bell pepper, cut into thin strips
# Bamboo shoots, drained and sliced if they come whole
# Cucumber, cut into strips
Cooking
In a bowl, mix together egg white, required salt, required pepper and cornstarch. Stir lamb slices into mixture to evenly coat. Let stand for 25 minutes.
In a wok, heat oil and add lamb slices in batches. Keep the slices separate and deep-fry lamb for 2 and half minutes. With the help of a slotted spoon, remove lamb from the oil and drain on paper towel. Get the oil out from the wok except two tablespoons. Add sliced bamboo shoots, finely chopped ginger, strips of bell pepper, finely chopped green onions, strips of cucumber as mentioned above and stir-fry for 5 minutes. Add coated lamb slices and toss over high heat for one minute. Add dry sherry. Now, serve the dish with appropriate decorations.
